Why I love making roast beef in the air fryer

I have always loved a good roast beef, especially after I learned to love rare meat. The best part about making the roast in the air fryer is the simplicity. A recipe that only takes about 35 minutes, including prep work, turns out like a meal you would have spent all afternoon making. The outer edges are seared perfectly while the inside is juicy and tender, just like it was made in your oven.

How to make air fryer roast beef

Make the rub. Chop fresh rosemary. Add it to a bowl with minced garlic, salt, pepper and olive oil.

Season the roast. Dry the surface of the roast. Cover roast with seasoning rub.

Cook the roast. In a preheated air fryer, cook at 390˚F for 7 minutes. Then, drop the temperature to 360˚F and cook for another 13 minutes. Flip the roast, and cook for another 10 minutes.

Beef is cooked to rare when the internal temperature reaches 125˚F and 145˚F for medium. Allow the roast to rest for about 10 minutes before slicing.

Can you roast in the air fryer?

Absolutely, this is the one of the best features of the air fryer in my opinion. Roasted vegetables come out great as well!

What should the internal temperature of roast beef be?

The temperature will range from 115˚F to 145˚F depending on how rare you prefer your red meat. I recommend you looking the temperature up if you are unsure.

How can I cook a roast that isn’t dry?

Letting the roast rest after cooking helps the juices redistribute and reabsorb into the meat and is probably the most important part. Another factor is getting a good sear on the meat with a higher blast of heat for the first bit of cooking time.

  • 2.5 lb rump roast
  • 3 tsp minced garlic
  • 3 tsp fresh rosemary, chopped
  • 2 tsp olive oil
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper


  1. Combine minced garlic, chopped rosemary, salt, pepper and olive oil in a small bowl to form a rough paste.
  2. Spread the rosemary garlic paste evenly on all surfaces of the roast.
  3. Preheat air fryer to 390˚F.
  4. Place roast in the preheated air fryer, for 7 minutes to sear.
  5. Turn the temperature down to 360˚F and cook for 13 more minutes.
  6. Flip the roast for the last 10 minutes of cooking, and remove from air fryer. 
  7. Allow the roast to rest at room temperature for about 10 minutes before slicing.
