How to make these butterscotch cookies with chocolate chips

Preheat your oven to 350˚F.

Whisk the dry ingredients. Add flour, baking soda and salt to a mixing bowl. Whisk to combine and set aside.

Beat the shortening and sugars. In an electric mixer, add shortening and sugars. Beat until fluffy and well combined. Add eggs and vanilla and continue to beat for 2 minutes.

Combine the wet and dry ingredients. Slowly add the flour mixture to the mixing bowl, about ½ cup at a time.

Add the chips and scoop. Fold the butterscotch and chocolate chips into the dough. Scoop onto a parchment lined baking sheet, allowing about 2 inches between each 2 tablespoon scoop.

Bake the cookies for 10-11 minutes or until edges are crispy and golden. Allow to cool on cookie sheet for a few minutes before transferring to cooling rack.
