- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon coarse salt
- 1 cup butter flavored shortening
- 3/4 cup brown sugar
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup butterscotch baking chips
- ½ cup milk chocolate baking chips
- Preheat oven to 350˚F.
- Combine flour, baking soda and salt in a mixing bowl. Whisk to combine and set aside.
- Beat the shortening and sugars. In an electric mixer, add shortening and sugars. Beat until fluffy and well combined. Add eggs and vanilla and continue to beat for 2 minutes.
- Combine the wet and dry ingredients. Slowly add the flour mixture to the mixing bowl, about ½ cup at a time. Continue to mix until smooth.
- Fold the butterscotch and chocolate chips into the dough. Scoop onto a parchment lined baking sheet, allowing about 2 inches between each 2 tablespoon scoop.
- Bake cookies for 10-11 minutes or until edges are crispy and golden. Allow to cool on cookie sheet for a few minutes before transferring to cooling rack.
