Chocolate Chip Butterscotch Cookies

Chocolate chip butterscotch cookies have the perfect, home-baked, retro vibe. They are soft and chewy, with a crisp golden edge. Made with butterscotch chips, these chocolate chip cookies have a rich molasses flavor that will warm your soul.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon coarse salt
  • 1 cup butter flavored shortening
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup butterscotch baking chips
  • ½ cup milk chocolate baking chips

Instructions

  1. Preheat oven to 350˚F. 
  2. Combine flour, baking soda and salt in a mixing bowl. Whisk to combine and set aside.
  3. Beat the shortening and sugars. In an electric mixer, add shortening and sugars. Beat until fluffy and well combined. Add eggs and vanilla and continue to beat for 2 minutes.
  4. Combine the wet and dry ingredients. Slowly add the flour mixture to the mixing bowl, about ½ cup at a time. Continue to mix until smooth.
  5. Fold the butterscotch and chocolate chips into the dough. Scoop onto a parchment lined baking sheet, allowing about 2 inches between each 2 tablespoon scoop.

  6. Bake cookies for 10-11 minutes or until edges are crispy and golden. Allow to cool on cookie sheet for a few minutes before transferring to cooling rack.
