This bread is one of the most simple quick breads to bake. It became popular during the great depression when it was more than important to conserve as much as possible, using what you had at home, even if it was over ripe bananas. This recipe is just that, using what you have on hand

Here’s what you’ll need to make it

  • Mixing Bowls
  • Loaf Pan
  • Cooling Rack
  • Spatula

How to make this banana bread recipe with 1 banana

For this recipe you will want to grab two bowls. One for wet ingredients and one for dry. After you combine all the wet ingredients and all the dry ingredients separately, you will mix the two together. This is key to preventing over-mixing of the batter.

Mix the dry ingredients. In one bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.

Mix the wet ingredients. In a separate bowl, mash one large banana. Add the applesauce, eggs, melted butter, and vanilla extract. Stir until combined.

Combine wet and dry ingredients. Gently stir dry ingredients into wet ingredients. Only mix until combined, you do not want to over mix.

Bake the banana bread. Pour the batter into a greased loaf pan and bake for 50-55 minutes. To check if the bread is done, insert a toothpick into the center and remove. If it comes out clean, the bread is done. If not continue to bake a few more minutes. The center should rise and split slightly when it is fully baked.

What if I don’t have enough bananas for banana bread?

You can make banana bread still, you just need to substitute for the moisture. In this recipe I used applesauce as an alternative. Another great option would be yogurt!

Can you use too much banana in banana bread?

Yes, if you use too many bananas it will bring the moisture content up and make it harder for the bread to fully bake in the center. It is definitely not something you will have to worry about with this recipe.

Why is my banana bread gummy?

If your banana bread turns out this way, you have likely over mixed the flour which develops the gluten and results in a poor texture for the bread. Don’t over mix!

Why is my banana bread crumbly?

If your banana bread turns out to be too crumbly it is because there was not enough moisture for the amount of flour or dry ingredients used.

Ingredients

  • ¾ cup applesauce

  • 2 eggs

  • 1 stick butter, melted
