These orange poppyseed muffins are a great make ahead breakfast. The combination of the orange zest and poppy seeds pair perfectly, and the yogurt makes them just moist enough. I made them light on the sugar so you can start your day going in the right direction and feel healthy!

This twist on the classic lemon poppy seed muffins adds a little variety by using orange zest and even some of the juice instead of the traditional lemon flavor. They are super simple to make and will get eaten up quickly. Grab one on the way to work and have a happy day!

How to make orange poppyseed muffins

Whisk together dry ingredients in a mixing bowl. Set aside.

Melt the butter before mixing it with the eggs, vanilla extract, yogurt, and orange juice.

Slowly mix wet and dry ingredients. Be careful that you do not over mix, this will throw off the texture of the muffins.

Scoop the batter into a lined muffin pan. Bake at 400°F for 10 minutes, then drop the temperature to 350°F for another 11 minutes.

Make the glaze. While the muffins are cooling, whisk together the orange juice, vanilla and powdered sugar. Wait until the muffins are cooled to pour over the muffins.

Sprinkle each muffin with poppy seeds for a little extra flavor and crunch!

Ingredients

For the batter:

  • 3 cups flour
  • 1 cups sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 ½ tbsp poppy seeds
  • 1 cup plain yogurt
  • 2 eggs
  • 1 stick melted butter
  • 1 tsp vanilla
  • 1 tbsp orange zest
  • 8 tbsp orange juice

For the glaze:

  • 1 ¾ c. powdered sugar
  • 1 tsp. vanilla
  • ¼ c. orange juice

Instructions

  1. Preheat oven to 400°F.
  2. Whisk dry ingredients, including poppy seeds, in a bowl.
  3. In an electric mixer, mix yogurt, eggs, melted butter, orange juice and zest.
  4. Slowly fold in the dry ingredients until combined.
  5. Using a cookie scoop, fill a lined muffin pan.
  6. Bake for 10 minutes.
  7. Drop temperature to 350°F for an additional 11 minutes.
  8. Remove from oven and allow to cool.
  9. Whisk all glaze ingredients in a measuring pitcher, and drizzle on cooled muffins.
  10. Sprinkle with poppy seeds before the glaze cools.
