Let’s face it, breakfast gets boring. Spicing it up with this easy Spam and eggs breakfast will brighten your morning. The Spam is perfectly crusted when it is fried just right in the frying pan. Bringing the breakfast together with some jasmine rice and avocado gives it just the right Hawaiian vibe. The next time you have some leftover jasmine rice don’t forget to give it a try!

How to make fried spam and eggs

This one is super easy, open the can. Slice the Spam, and fry in a ½ tablespoon of olive oil on medium heat for about 5 minutes on each side. This should be enough time for the Spam to form a nice crispy brown crust on the outside.

You can really serve fried Spam with anything you would like. Its super popular in Hawaii to serve Spam with eggs and rice for breakfast, so I wanted to include some rice. Opted for some avocado because we had it on hand at home.

No matter what breakfast foods you serve this with, it is going to be delicious. You can basically substitute fried Spam for bacon, sausage or Canadian bacon in any breakfast recipe so it is super versatile. I mean why not keep a can or two on hand, right?

How do you store Spam once it is opened?

You can keep it in the can and wrap it with plastic wrap, or store in an air tight container in the fridge for up to a week.

Spam and Eggs

Ingredients

Scale
  • 1 can Spam

  • 1 tbsp olive oil

  • 2 cups cooked jasmine rice

  • 2 avocado

  • 4 eggs

  • chives

Instructions

  1. Open can of Spam and slice lengthwise to about ¼ inch.

  2. Fry Spam slices for about 2 ½ – 3 minutes on each side, until golden brown and crusted. Remove from pan and set aside.

  3. While this is frying, peel and cut up your avocado.

  4. Reduce heat to medium low to fry your eggs, sunny-side up needs to cooked slowly so the yolk does not cook too quickly.

  5. Assemble the rice, avocado, and spam on your plate.

  6. Top it with the egg, and sprinkle with salt, pepper, and chives. 

Notes

I had cooked the jasmine rice ahead of time, but if you need to cook some just follow the directions on the package of the rice.
