Spam Eggs and Rice

This spam and eggs recipe is easy to make and has just the right Hawaiian vibe. A great way to add variety to your breakfast routine.

Ingredients

  • 1 can Spam, sliced

  • 1 tbsp olive oil

  • 2 cups jasmine rice, cooked

  • 2 avocados, diced

  • 4 eggs

  • Fresh chives, chopped for garnish

Instructions

  1. Open can of Spam and slice lengthwise to about ¼ of an inch.

  2. On medium heat, in a non-stick skillet fry Spam slices for about 2 ½ – 3 minutes per side, or until golden brown. Remove from skillet.

  3. Reduce heat to medium low to fry eggs for sunny side up. 

  4. Serve spam and eggs over rice. Garnish with chives.
